Okay, the second docs for one of my biggest features.

First I just wanted to add a small new section. But then I realized that a lot of stuff was already outdated, and quite a few other features were missing.
Now it's completely reworked.

This pull request includes several updates and improvements to the extensions/Expression-Images.md file, focusing on enhancing the setup instructions, renaming sections for clarity, and adding new features for managing character expression images. Included a new section on using default expressions and fallback options when no custom images are available.
Provided instructions for using sprite folder overrides to manage different sets of expression images for characters with the same display name.
