Option to specify openvpn server port is already implemented, you can select port when installing new container or even change port after it installed.
Support for SSH tunnels - you don't need amnezia or anything else to use SSH tunnels if you have your own VPS server. Explain please what scenario you mean.
Support for X-ray/V2Ray with Reality flow - it is in roadmap. You can use Cloak in Amnezia which is almost the same as Reality.
