Adds easy-stock to the Applications section in both README.md and README_cn.md.

easy-stock is a local-first AI research workbench for the China A-share market: market overview, theme radar, limit-up ladder and sentiment-cycle analysis, AI stock reports, portfolio inspection, and automated collection of post-market commentary. Its AI copilot runs on user-supplied DeepSeek API keys via the OpenAI-compatible endpoint (deepseek-v4-pro / deepseek-v4-flash), with all research memory kept on the user's machine.

Entry follows the existing Applications table format; the logo is hot-linked from the project repository's raw URL (same pattern as the One API entry). Happy to adjust wording or add the entry to the other language READMEs if preferred.
