According to Lutris releases, v0.5.20 has been released a week ago, however the latest ghcr.io/games-on-whales/lutris:edge built 2 days ago is still using Lutris v0.5.18.

P.S. currently the latest version of Lutris is v0.5.22 instead of v0.5.20.

I'm trying to find where the Lutris version is specified

github_download "lutris/lutris" ".assets[]|select(.name|endswith(\".deb\")).browser_download_url" "lutris.deb"

So technically, just need to trigger an image build to use the latest version?

Yes but apparently this has been done and still the old image was downloaded, probably because in cache as I have understood. Another user has created an updated image or you can build one yourself locally.

It's not that simple cuz Lutris since v0.5.19 uses Proton and needs patch and permission thingy just like Steam. Anyway I've addressed the problem in #296.
