Fix incorrect Bedrock Mantle endpoint URL in the OpenAI-Compatible provider guide.

What was changed

In the "Solution 3: AWS Bedrock Mantle" section, the endpoint URL was:
https://bedrock.us-east-1.api.aws/v1

Changed to:
https://bedrock-mantle.us-east-1.api.aws/v1

Why

Found this while setting up Bedrock Mantle with Open WebUI. The current URL returns connection errors.

The AWS official documentation lists all Bedrock Mantle endpoints
as bedrock-mantle.{region}.api.aws, not bedrock.{region}.api.aws.
