Stacks on top of #305 — targets its fedora-variant-images branch so the
new apps ship with both Ubuntu and Fedora variants in the same PR chain.

Summary

Adds three new media-client apps following the existing per-app pattern.
Each gets an Ubuntu build/ and a Fedora build-fedora/, plus a
wolf.config.toml and _index.md. All three are wired into the apps
and apps-fedora CI matrices in auto-build.yml.

Notes for reviewers

assets/icon.png and assets/screenshot.png are not included — the
wolf configs point at games-on-whales.github.io/wildlife/apps/<name>/assets/icon.png,
so artwork should be added to the wildlife site (or committed here) before
the apps show up properly in the Moonlight app list.
URL resolution in each Dockerfile uses jq against the upstream JSON
APIs, so the build picks up whatever the latest published release is at
image build time — no version pinning to keep in sync.
Plex HTPC is closed-source; FreeTube and Emby Theater are both open
source. The PR intentionally uses official upstream artifacts for each
rather than repackaging.

apps matrix builds plex, emby, youtube on Ubuntu
apps-fedora matrix builds the same three on Fedora
ghcr.io/games-on-whales/plex:edge launches Plex HTPC to the server-picker screen
ghcr.io/games-on-whales/emby:edge launches Emby Theater to its login screen
ghcr.io/games-on-whales/youtube:edge launches FreeTube and can play a video ad-free
Gamepad input works in all three (Moonlight → Sway → Electron/HTPC)
