Add capture and schema inference for gRPC/Protocol Buffers and JSON-RPC/MessagePack protocols.

Part of #40.

Acceptance:

• Raw observations, decoded fields, inferred schemas, and hypotheses are separated.
• Credentials are never persisted by default.
