Problem Description

If the MCP server(s) crash or are down, it doesn't seem like there is an easy way to tell from mcpo.

Desired Solution you'd like

Some sort of health check endpoint which exposes the underlying status of the configured MCP servers would be handy, it would enable restarting the mcpo if e.g. a stdio MCP server exited unexepectedly.
